25 years of professional cooking and entertaining with an emphasis on teaching others to create and cook from the Earth's resources... It started with an obsession with Julia Child. I watched her public television show and cooked up a storm starting at age 7. By the time I had finished mypre-law college education at U.C. Davis I knew that my real passion was cooking. I took any course work I could afford at The California Culinary Academy in nearby San Francisco. I was fortunate to have to work my way through college. My job experience in restaurants that four years shaped me into the chef I am today.
Northern California was the start of the slow food movement and I was right in the heart of it. From the innovator Alice Waters at Chez Panisse to little cafes, chefs and cooks were being supplied from nearby gardens, small central valley producers and artisan food crafts people. The movement we are seeing everywhere today is a continuation of this earth to plate philosophy. Supporting our small farm and artisan food crafters builds a community of people committed to health and vitality.
I started my catering business in 1990 out of a need to feed people. I had a burning desire to findthe best food produced and create it in a way to put families around the table. That is all it comes down to for me….fresh, local, seasonal ingredients prepared in a way to enhance what the earth has already provided. Nothing processed, unless it is my garden pickles in a hot water bath!
All of our remarkable food is sourced from local California Farms and ranches. We carefully inspect each one to insure we are bringing the cleanest, most ecofriendly food to our clients. Our farmers and ranchers go beyond the catch phrase of Organic. They are committed to protecting our eco systems and building a renewed food system in our country.
I have been blessed to be a part of Greenfeast for the past 9 years. The committed group of chefs,ranchers, farmers and the dedicated staff at The Ecology Center have such a delicious time putting this feast together. It revitalizes each of us as we work together to fix a broken food system.
The newest project that I am a part of, Eilo's Kitchen, is a dream come true. We are evolving the orange county food scene in a hip Airstream commercial kitchen. Bringing the healthiest food possible to you... feed your amazingness!
